Let's Talk Potatoes
Article on the potato, a staple in Norway since the 1700s, and "Norway's
most important vegetable." Includes recipes for boiled/steamed potatoes and
for Hasselbakpoteter, or sliced roasted potatoes. (This recipe for Hasselback
Potatoes uses Jarlsberg cheese.)
Pickled
Cucumbers
Crisp pickles, prepared about 4 hours ahead, marinated with vinegar, sugar,
mint, parsley, salt and pepper. (I personally prefer white to black pepper in
these pickles.)

Swedish Hasselback
Potatoes
A Betty Crocker recipe. Potatoes are sliced almost all the way through, then
baked and topped with Parmesan cheese and bread crumbs. Simple and very
impressive. Preparation and baking time take almost two hours, so this isn't a
great impulse dish for tonight's dinner table.
Swedish Potato,
Ham and Pea Salad
Dill dressing, an interesting combination of vegetables and smoked ham make this
a good substitute for standard potato salad.
